Anyone getting ready to make some Lutfisk in the next couple of months?

And don't correct the spelling. Swedes spell it lutfisk, lutefisk is for Norwegians. Of course if you're making lutefisk, please feel free to share your methods.

They say that Asmodeus, the King of the demons was exocrised by the odor when a fish heart and liver were burned on embers.
I think that all the other demons abandoned Scandinavia,
once lutfisk or surstromming kegs were opened for the first time.
And they aint been back since,
other than for brief assassination missions.

Rommegrot (a heavy pudding made with cream and flour and served with butter and brown sugar - very rich)

Rusks - like Melba toast

All kinds of cookies - Sandbakkelse, krum kake, kringla, Berliner kranze.

Fruit soup is good too.

Lefse is a potato-based flatbread served rolled up with butter, butter and sugar, or butter and preserves. You make mashed potatoes "table ready" with butter and milk, then let them get completely cold (they can't sit too long, though, or they will weep and result in a wet dough). When the potatoes are cold, you mix in just enough flour to make a workable dough, then form into balls to be rolled flat. Using a special waffled-surface rolling pin, you roll each ball into a very thin round, then bake it on a very hot griddle for about a minute. You can't use a regular pancake griddle, because it doesn't get hot enough.

When all the lefse has been baked, I use a pizza cutter to cut each round into triangles.

Every year, my family has a "lefse day" the weekend before Thanksgiving - everyone brings their potatoes, whoever has a griddle brings one, and we make enough lefse to last through Christmas. I've had to miss the last several years since we moved from Minnesota to Idaho, but my husband and I have our own lefse day here the same day my siblings and parents are getting together back home.

He's of 100% Norwegian descent. My mother is mostly Norwegian with a smidge of Swedish.

My ethnic background is 13/16 Norwegian and 3/16 Swedish. (I guess that explains the blonde hair and blue eyes.)

I thought it was Norwegian. Either way, it's still Scandinavian, although I'm sure there are plenty of other ethnic variations on the theme.

It can get annoying if it has too much orange rind in it.

Not a fan of pickled herring.

Riced potatoes are a bit bland.

Krumkaka is good, but it's a cookie. You'd have to be pretty bad to have bad cookies

I still miss my grandmother's krum kake, and she's been gone for 15 years. My uncle makes a pretty good batch, though.

Fortunately for me, my sister makes Berliner Kranzer every year and sends some to us. They're one of my husband's favorite Christmas cookies, but I don't make them.
