Good pick. I think that a very ripe danish blue cheese is the best you can get, primarily because I adore moldy cheese. Damn . . . I love that stuff.

I have trouble eating moldy cheese...mold is just yucky. I can't explain exactly why I like the Herkimer cty. You'll have to try it.
