Cookin' with Kitten.............
Today's Entree:

Chicken Broccoli Casserole

3 cups broccoli florets ( about 1 1/4 lbs)
2 cups cooked chicken or turkey
1 can (10 3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup mayonnaise or salad dressing
1/2 cup grated Parmesan cheese
1/2 teaspoon curry powder
1 cup soft bread cubes
2 tablespoons butter or margarine, melted

Place broccoli in a saucepan; cover with 1 inch of water. Bring to a boil. Reduce heat; cover and simmer for 5-8 minutes or until crisp-tender. Drain. Place in a greased 11 inch x 7 inch x 2 inch baking dish; set aside. Combine chicken, soup, mayonnaise, Parmesan cheese and curry powder; spoon over broccoli. Top with bread cubes and butter. Bake, uncovered, at 350 degrees for 25-30 minutes or until throughly heated.

Let's add a nice salad as well:

Orange and Red Onion Salad

1 tablespoon butter or margarine
1 cup sliced almonds
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon white pepper
1/2 cup vegetable oil
1 bunch romaine, torn
2 medium oranges, peeled and sectioned
1 small red onion, thinly sliced

In a skillet, melt butter over medium heat. Saute the almonds until golden brown. Remove almonds to paper towels to drain. In a small bowl, combine the next five ingredients; whisk in oil. In a large bowl, combine lettuce, oranges, onion and almonds; add dressing and toss. Serve immediately.

And, no, sugar fiends, haven't forgotten dessert!!! :evilgrin:

Peachy Dessert Sauce over Ice Cream

1 teaspoon cornstarch
1/4 cup water
2 tablespoons apricot jam or preserves
1 1/2 teaspoons sugar
1/2 teaspoon lemon juice
3/4 cup sliced fresh or canned peaches

In a small saucepan, combine cornstarch and water. Add jam, sugar and lemon juice; bring to a boil. Cook and stir for 1-2 minutes; reduce heat. Add peaches and heat through. Serve warm over ice cream. Cover and store in the refrigerator. To reheat microwave on medium for 1-2 minutes or until heated through.

6. Wow, does that sound great.
I'm going to cut and paste it and give it a try maybe next weekend.

Today I have a crockpot going with beef stew. Nothing like a hearty meal on a gray, blustery day.
