Caesar dressing is mostly olive oil. Olive oil is ~2000 calories per cup!!!!!!

Here's a Caesar dressing with about 400 cal/cup. I think it's better than the classic variety---

I love vinaigrette and blue cheese, so I picked blue cheese. My fave though, would be a nice salad topped with apples, candied walnuts (or pecans), crumbled blue cheese, and a red wine vinaigrette.
