Why is bacon so damn high? Did the Atkins diet cause this?
Talk about inflation. Check out the price of bacon over the past three years. Well, I put mine back in the case ($5.39 per lb Oscar Meyers) and the store brand (Giant) was $3.99 per lb. Damn...no more bacon for me.

10. I use buckboard bacon cure (I get it over the internet) and my smoker
You cure the meat (I use pork butt, unless I can get pork bellies. Pork butt is very lean---it's the pork shoulder. Bellies are nice and fatty!) for 10 days in the fridge, then smoke it at a low temp until it hits 140 degrees. I use maple and hickory wood for the smoke. Then it lives in the freezer until I need to fry some up. Outstanding!

15. I just bought the kitchenaid sausage making accessories!
the ones that fit on the stand mixer. Meat grinder, plus a sausage stuffer. Got a couple of good books, too, but have yet to even unpack the thing and get started. I'm a nice Polish grrrl, so I'm hoping to whip up a super good kielbasa.

12. I have cured my own bacon a few times, (Honey cured).
I have trouble getting pork bellies. I haven't tried pork butt. Good idea though.

It's good, but not quite bacon. Very lean, too, so you might need to add a bit of oil to the pan to fry it up! For canadian bacon, use a pork tenderloin.

My GF lives on a farm and a guy down the road was butchering a hog, so I got 30 lbs of pork bellies. Yum! Still have 15 lbs left to cure, but am REALLY enjoying the first batch. It's definitely real bacon!

Why? hell I don't know, it can't be from a shortage of pigs, we drove across kansas and colorado a couple of years ago and there was a major hog farm every twenty miles or so.
The only time we get bacon now is when it's on sale.

it's 4-5 bucks a pound here, and I only buy it when it's on sale.

But, my brother in Nebraska, where they have processing plants nearby, gets it for 2 bucks a pound.

Used to live by a weekend farmer's market where Amish bacon was brought in. Half the price and it spoils you. Can't appreciate the supermarket stuff after that.
