3. Pretty much anything...
The two ladies who are moderating the household hints and the Quick & Easy recipes area do the best they can but don't have a whole lot of time.

I'm posting some vegetarian/vegan recipes when I find some good ones but more are always welcome.

Oh, and I had a request for vegetarian crockpot recipes. I posted several of them but a ladies boss is looking for more - especially of the 'healthy' variety.

6. Squash suprise
Get some good fresh squash. Slice into pretty thin pieces, in frying pan over medium heat sautee till done. While cooking add a bit of your favorite hot sauce. cook in olive oil.

and in the morning you get your suprise

2. Delicious Stuffed Celery Surprise
Ingredients:

1 Bunch Celery (I use green band, but red band works, too)
1 Jar Peanut Butter (I like Jif, but any flavor works)

Directions:

Peel off celery stalk from bunch. Break off the ugly part at the end. You can throw it at the cats, they enjoy being teased, it makes them feel like part of the family.

Using a spoon, slather a bunch of peanut butter on the celery stalk.

Serves one.

12. I have 2 really good recipes

Texas Caviar (Nachos dip)

1 green pepper
1 bag italian seasoning
2 cans black eyed peas (strained and rinsed)
1 white onion
green onions (to taste)
jalapenos (to taste)
1 habenaro pepper
1/4 c. oil

Mix all the ingredients and it's best to let it sit overnight so the flavor sets in.
Use as dip for Nacho chips.

Very, very good.

Chocolate chip banana muffins or bread

Bowl #1: 1 c. sugar
1 egg
1 stick of butter
Cream until fluffy

Bowl #2: 1 c. mashed ripe banana
3 tbs. milk

Bowl #3: 2 c. sifted flour
1 tsp. baking powder
1/2 tsp. baking soda

Alternate banana milk mix and flour mix to batter until moist. Add 1 cup chocolate chips.

Mini muffins-bake 20 minutes at 350
Bread in 9" loaf-1 hour at 350

15. Shrimp Fajitas

Ingredients:

1 - 1 1/2 lbs raw shrimp, peeled and deveined
1/3 cup lime juice
1 cup chopped cilantro, loosely packed
2 cloves of garlic, minced
1/4 tsp black pepper
1/4 tsp chili powder
1/4 tsp salt
2 tbsp vegetable or olive oil
1 pinch of cayenne pepper (optional)
1 yellow or white onion, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced

Instructions:

Combine shrimp, lime juice, cilantro, garlic, pepper, chili powder, and salt (and a pinch of cayenne pepper for spicier fajitas) in a bowl and let stand for 20 minutes at room temperature.

Heat oil in large skillet and add onions and peppers. Cook until slightly limp. Remove from heat and keep warm.

Add shrimp and lime juice mixture to skillet and cook until shrimp are opaque (about 3 minutes).

Return vegetables to the pan, mix together and heat through.


Serve with warm flour tortillas, sour cream or plain yogurt, and green tomatillo salsa.

17. This isn't vegetarian, but it's great!
We published a cookbook where I work, and this is a very popular recipe. I guarantee it will be a big hit at your next get-together.

Chicken Enchilada Dip
1 lb. skinless, boneless chicken breast halves
1-8 oz pkg. cream cheese, softened
8 oz. mayonnaise
8 oz pkg. shredded cheddar cheese
1-4 oz can diced green chili peppers
1 (or more) jalapeno pepper(s), finely chopped
Preheat oven to 350 degrees. Place chicken breast halves on baking sheet. Bake for at least 20 minutes, or until no longer pink. Cool and shred, (the Pampered Chef chopper works great for this). Place chicken in bowl, mix with cream cheese, mayo, cheddar cheese, chilis and jalapenos. Bake uncovered for 30 minutes or until edges are golden brown. Serve with crackers or tortilla chips. *You can keep it warm in a small crock pot set on low if you wish.

19. Nut and Seed Patties
1 cup finely chopped yellow onion
1 1/3 cup finely chopped mushrooms any type,
(but portobellos are nice)
2/3 cup raw sunflower seeds, ground
1/2 cup raw peanuts, ground
1/2 cup fresh parsley, chopped
2/3 cup grated sharp cheddar cheese, or try monterrey jack with peppers
2/3 cup tahini
2 large cloves garlic, crushed
4 T. lemon juice
2 T. tamari soy sauce
4 onion rolls (or your choice)
lettuce
tomato slices
ketchup
mustard




Instructions: In a large bowl, mix all ingredients. Form into four large patties. Saute in a little oil on each side until crisp. Serve on toasted buns with lettuce, tomato and ketchup or mustard.

Scented Pumpkin dip.

1 can pumpkin (not for pies)
1 ¾ tsp cumin
Medium finely chopped red pepper
¾ cup finely chopped onion
2 TBSP butter
1 tsp paprika
½ tsp sugar
½ tsp finely chopped parsley
¾ tsp salt
¾ tsp pepper
¾ tsp hot sauce

Combine ingredients in sauce pan and cook till a golden brown. Apx 8 – 10 minutes.

Turn off heat and add ¼ cup whipping cream, 2 oz cubed room temp. cream cheese, ½ TBSP of chopped parsley and 15 oz pumpkin (not pie filling).

Can be spread on slices of sour dough bread. Yum

It has a warm toasty creamy taste.



Mary’s Carrot Soup

1 medium onion minced
2 cloves of garlic minced
2 Tbsp. Olive oil
1 Tbsp. butter
1 ½ Cumin (Roast then grind your own)
1 Tbsp Brown sugar
½ to 1 tsp black pepper (more if you like)
1 to 2 tsp. salt
5-6 pealed and chopped carrots (2 cups)
1 medium russet potato pealed chopped rough
1 can vegetable broth
½ cup half and half
Water

1 large red pepper
1 ½ Tbsp. butter

In large pot heat olive oil and butter, then add onions, garlic, cumin, salt and pepper. Cook over medium heat till translucence. Stir to prevent burning. Add carrots and potato. Cook slightly then add vegetable broth and enough water to cover vegetable. Add brown sugar. Cook till vegetables are soft. Turn off heat. Using a hand held blended, puree till smooth. Stir in half and half.

Roast red pepper till blacken (poke a few holes before roasting) then place in cover dish for ten minutes. Pepper will continue to cook and steam making it easier to peal. After pealing and seedling, puree red pepper with melted butter.

In serving bowls add soup then drizzle red pepper puree.

Serves four

All of the measurements can be modified to fit your taste.


BEEROCKS

INGREDIENTS:
• 1 large head cabbage, shredded
• 2 Yellow onions, chopped
• 2 cloves garlic, chopped
• 3-4 lb. seven bone roast
• 4 tblsp. canola oil
• 2 tblsp. ground black pepper
• salt to taste
• 1/2 tsp. cayenne pepper
• 3 loaves frozen bread dough or make your own

PREPARATION:
• In a large skillet, salt and pepper the roast on both sides.
Brown off roast on both sides. Add water to cover and cook roast on
stove top or a 350 degree oven until roast is well cooked.
Set aside and cool. When cool, shred the beef and remove all fat.
In another large skillet, saute the onions and garlic until onion is almost
golden brown. Add the shredded cabbage and cook until limp. Add salt, pepper
and shredded beef to the cabbage mixture and let stand until cool.
ASSEMBLY:
• Cut the frozen loaves into 4 sections each and let rise again.
Roll out each section into an 8 inch square. Place 2-3 tablespoons
of filling onto the square and roll up, folding the sides in so no filling will escape
from the roll. Set the Beerocks aside to rise again. Place the
beerocks on a foil lined
baking sheet and cook in a 350 degree oven for 25-30 minutes
until golden brown. If you like a crusty beerock, spray the rolls with water
just as they begin to brown. This may be repeated during the browning process. Serve hot

23. Macaroni salad
Dice up 2 green peppers and an onion. Boil 6 to 10 eggs. Peel the eggs and throw away the yolks. Dice the egg whites. Open a small can of black olives and drain the juice. Boil some salad pasta. Drain and let cool. Combine everything together in a large bowl with as much mayonnaise as you like. I use Hellmann's. Salt to taste. Spread the mixture out on a serving plate and form it with your hands. Top very liberally with Parmesan cheese. Let it sit in the icebox overnight so the mayonnaise soaks in really good. Enjoy.

24. Easy cauliflower
heavy duty foil...

trimmed head of raw cauliflower

package of salad dressing mix (Italian-dry mix particles)


rub some butter or drizzle olive oil on the cauliflower head..sprinkle on the dry salad seasoning mix..fold edges of the foil together to make a tight seal..

place on a cookie sheet (with sides to catch the butter run-off)...bake at 350 for a while..30-min or so.. carefully open the foil and sprinkle some parmesan or romano cheese if you like.. finsish baking for 20-30 minutes more..

25. Easy baked beans
Spray apyrex baking dish with Pam. Add 3 or 4 cans of pork and beans with most of the juice drained. Add 1 diced green pepper, one diced onion, some very small crispy bacon pieces, brown sugar, mustard, and worcestershire sauce. Cook on 350 until the juice quits bubbling. Serve cold. Tastes better the next day.

26. Quick and easy chili
Brown 1 lb of hamburger meat. Drain the fat. Add 3 cans of cooked pinto beans, a diced onion, some diced garlic, a large can of diced tomatoes, a can of chicken broth, salt, chili powder, comino, and cayenne if you like it hot. Slowly simmer for about 2 hours. You can add another can of chicken broth or water if it isn't juicy enough for you. Serve with crackers or oyster crackers.

27. Deer cubes to die for
Cut 2" x 2" deer cubes off of the backstraps. Marinate them overnight in Lawry's Garlic/Herb marinade. Butterfly them halfway open and put a slice of jalapeno inside. Wrap them in bacon and toothpick the bacon on them going through the jalapeno. Cook over charcoal. The bacon might make the charcoal flare up. Turn them a lot with tongs. Serve over a bed of wild rice. Beef can be substituted. My favorite.

29. Super easy red sauce!
Easy red sauce for pasta

1 can tomatoes diced (15 or 16 oz)
1 can tomato sauce (15 0z)
1 can tomato paste (6 oz)
1 tablespoon olive oil
Garlic clove or more if you wish
onion diced
oregano to taste
pinch of salt
brown sugar to cover the palm of your hand

Mushrooms or meat or some combo of your choice.

Saute onion and garlic in the olive oil in a large pan, when onion is cooked add the can of tomatoes and the can of sauce. Rinse cans with water (about half a can) and add to pan.

Add oregano or other Italian spices to taste along with the salt, then add brown sugar. (Note on the brown sugar--I never measure it--it is just a small mound that covers the palm of the hand--don't get all worked up about the amount here--OK?)

If you want to add some kind of cooked meat (hamburger, cooked sausage, or even diced pepperoni. Veggie hamburger works too!)--do it now, along with any mushrooms or other stuff you like in sauce. (I've used diced zucchini, shredded carrots, chopped spinach--anything goes!)

After it all simmers for a few minutes--about 20 or so--stir in the tomato paste. It will serve to thicken the brew. Cook for a few more minutes and then re-adjust your spices.

IF you like, you can stir in Parmesan cheese just before you pull the sauce off the heat. It gives a nice flavor to the sauce, but it WILL burn, so do put it in last!

Serve over cooked drained pasta.

Don't laugh--but it is easy to make, and it tastes like you cooked all day!
