A Cooking Question For You Guys
Alright...I'm making beef kabobs for dinner tomorrow night. I marinated the beef cubes in a garlic and rosemary marinade, and it's in the fridge marinating overnight. I do have a question though...

I'm wondering whether I should make rice to go with that or mashed potatoes. What would be your recommendations?

2. how would you make that?
my family's hispanic, so we always include salsa verde in our rice before we put water on it. That definitely makes the rice VERY spicy!

8. There's alot of versions, but if you do the salsa thing, you already -
have the idea.

I generally use whatever tastes I have on hand, sauteed for a couple minutes in a spot of oil, butter, or stock - before adding water and boiling. Throw in just a bit of veggies just before the rice is finished for color and interest.

Recipes aplenty via a quick google, if you want particularly ethnic version.

10. My variant
Sautee onions and mushrooms in the same pot you are gong to cook the rice. Add rice and water and steam with the sautee stuff still in it. Maybe add a bullion cube to the water.

13. Yes, same pot. Add some meat to your sautee and you have Jambalaya.

4. Whichever you are better at preparing
I am now a vegetarian. But when I was a carnivore, I always preferred rice over potatoes with beef. But it is really a matter of taste.

Just do a good job in the preparation. Well-prepared mashed potatoes are better than poorly prepared rice and the converse is true.

So just prepare the item you are most comfortable at doing well.

6. Basil lemon rice is what we do with kabobs.
Easy recipe, tastes like you slaved over it.

Cook white or brown rice.
Chop a couple tablespoons of fresh basil (to your taste. We like basil, so use lots, and I grow it.) very, very fine.

Toss basil with a table spoon of lemon juice.

Toss rice with basil and lemon juice until well mixed.

This also works with cilantro and lime, parsley and lemon, tarragon and orange juice, etc....

7. microwave the potatoes half cooked
then put the quarters on the skewers with the beef, baste with salsa picante- voila, almost anticuchos. servw with pinto or black beans.

9. Personally, I would do one of two things...
A. A wild rice mix (add some herbs)
2. Orzo with wilted spinach (like they serve at Macaroni Grill-I've made it, its easy!)

I just don't see kebobs with potatoes. Rice or orzo is MUCH better

12. If there is a Trader Joe's in your area
They make pre-packaged rice medley that will do the trick. Different types, my fave is a mixture of brown rice and wild rice.

14. Rice
Rice pilaf, Spanish rice, or how bout this one...


Feathered Rice

1 teaspoon vegetable oil
1 cup long grain rice
2 cups Chicken Stock
1/2 teaspoon salt

1.Put the rice and oil to fry in a small pan at medium heat, stirring from time to time. (golden color)
2.Slowly add chicken stock - it will bubble so be careful
3.Add the salt.
4.Turn the heat to low and put the lid on the pan.
5.Let it simmer for 12-15 min.
7.Remove from the heat and let it wait covered for 5-10 min.
