1. Portland is vegetarian mecca
I'm a carnivore myself, but I love to go to Old Wives Tales. Great salad bar & the best Hungarian Mushroom soup in the universe.

Also the vegetarian menu at Thanh Thao (Thai) is the diggidy bomb. There's a mushroom dish in a ginger sauce that I always get.

2. The Milwaukee area has exactly one purely vegetarian restaurant
Bombay Sweets, a little hole-in-the-wall Indian place. Good, cheap.

3. Chopsticks and The Top
in Gainesville, FL

Chopsticks has incredible summer vegiie rols and Thai eggplant with garlic and lemon sauce, YUMMY!!

The Top has Spicy Peanut and Coconut Dish with Tempeh...Yummy squared...

Used to be more places, but a lot of them closed down when the chain restaurants came around...

4. Udippi Cafe
(I hope I have the name right) in Overland Park, KS. In general, Indian restaurants have many vegetarian dishes. This one is purely vegetarian, and while I'm an enthusiastic carnivore myself, I don't miss meat when I'm there.
