What's for Dinner, Sat., Aug. 8, 2020

Frittatta with sausage and Fontina cheese, herbs.

Corn cut off the cob and mixed with fresh peas.

Roasted onions, shiitakes, and eggplant.

Baby arugula salad.

Dessert: plum tart with vanilla/almond ice cream.

Got to have the fake parm...reminds me of my Mom...who cooked out of boxes. For years I thought mashed potatoes came in a box.

I had to go to Boston for a few days on business. The Landlady(!) joined me and we're staying in a lovely hotel in Copley Square. There are quite a few Asian restaurants nearby and we decided on Basil Thai. Not sure what we'll have but the outdoor seating looked well-spaced. Probably seafood. It's Boston, after all.

I was moving some boxes in the garage earlier this week, and found a Sandra Lee Semi-Homemade Comfort Food cookbook. I don't remember buying it, but the copyright is 2010 so it's not that old.

I looked through it, and it this comes out good I'll try some of the others. Might come in handy for late-notice dinners, assuming we can ever have dinners again without risking infecting each other.

(sliced tomatoes for me--Al can't have food w/ peels or seeds)


There's still some apple crumble left if I go looking for dessert.

and since I made pie crust, I made a pumpkin pie and I serve it with dairy free whipped cream for me and regular for hubs...my favorite pie at any time... Also, I served strawberries with the quiche

(the actual day is a work day), so went fancy: lobster, crab, and shrimp Newburg on puff pastry, salad with local vegetables, and for dessert, raspberry cheesecake mousse. The wine was a lovely dry Riesling from the Mosel.

Might as well celebrate and enjoy, tomorrow is not necessarily a given.

A taco cream sauce, kidney beans, ground sirloin and green chilis. Added queso fresco and sour cream with chopped fresh tomatoes from the garden on top. It wasn’t bad. Definitely kid friendly lol

Peach sun tea. Love sun brewed tea.
