What's for Dinner, Thurs., Aug. 6, 2020

Vegetable sandwiches:

Garlic herb white bean spread, red onion, carrot (shredded), feta cheese. Caramelized onion. I have a sectioned dish and there are three areas for chopped herbs. Sage, rosemary, and thyme are there for sprinkling on the top of sandwich. This sandwich on pumpernickel.

Also:

Potato cake sandwiches. Swiss cheese, melted, and broccoli rabe which has been cooked in olive oil and garlic.

Curried rice with vegetables.

Santa Claus melon for dessert.

But with no strange (to me) spices such as nutmeg, and made with a Panade (low carb bread cooked in milk to lovely gumminess, to add moisture to the meatballs, which are cooked in a pan with water up to their waists). Sides are cucumbers sliced thin with Splenda and vinegar, and mashed potatoes.

Dessert is probably leftover Amish cheesecake.

She's making another of her grandmother's recipes - Chicken Paprikash with homemade spaetzle and roasted broccoli as sides. I made a blueberry cobbler for dessert which will be served warm with vanilla ice cream.

She made a ton of Hungarian Goulash last week and we just finished it up. I didn't tell her, but I doctored the leftovers up a bit (tasted much richer). I drained some of the juice (mainly water), added a bit of beef broth, made a half portion of paprika crema (sauted minced onion, 2 T paprika, tomato paste, olive oil), a bit of thickener, and a tsp of vinegar. I let it cook another hour. My daughter and hubby liked it much better.

Caramelized red onion, browned mushrooms - mixed baby bellas and shiitake - and Gruyere cheese.
Fresh cantaloupe.

Baby back ribs slow baked - spicy dry rub yesterday and some traditional BBQ sauce at the end of the six hour bake today.;
Green beans from the garden
Baked sweet potato

FLFC was all in for some of the rib meat. He had been underfoot and talking about them for at least an hour.

thinking I would make some meatballs to go into a homemade spaghetti sauce and serve over zucchini noodles, and serve that with a salad. (Al is diabetic and I'm trying to help him eat more healthfully. Also, we still have zucchini in the garden.)


Al had another idea: "Can you make me a cheeseburger?"


Yep. And a salad.
