What happens when you make muffins without baking soda or baking powder?

I am about to find out in a few minutes.

The muffin tin was already in the oven for about 3-4 minutes before I realized that I had forgotten those ingredients. I hope that they are edible, even if kind of flat. That was about $4.50 worth of ingredients. I just hate wasting money and food.
I suppose birds might be able to eat them even if they are not very tasty for humans.

They might turn out like hockey pucks, but maybe not too bad if it was self-rising flour.

Still edible, and you might try spritzing water into the microwave and try to rehydrate a bit.. 20-30 seconds. Try on one first.

They are not hockey pucks but certainly not fluffy or airy.

I won't throw them out but I wouldn't serve them to anyone other than myself. Maybe a few birds.

In the future, I should measure all ingredients and have them out on the counter before mixing anything together.

They'll freeze so you can pull out a couple whenever you like. Besides eating them as is, use crumbled muffin topping on ice cream, sliced fresh fruit, or yogurt. Crumble one or two and mix into your next batch of muffins, or try mixing some in pancake batter. If they can be sliced without falling apart, fry muffin strips in butter and serve with honey, jam, syrup or peanut butter.

Reminds me of the time I broiled banana bread.... I could not figure out why the bottom was still wet........... duh..

You might be able to break up your muffins, add milk, eggs, sugar, or other flavorings, and make a nice bread pudding. Or make French toast.

At least you can have them for yourself. Maybe like chewy granola bars?
