What's for Dinner, Mon., Aug. 3, 2020

Chicken thighs and breasts with a big stack of roasted vegetables over them. Just about every kind of vegetable: carrots, okra, onions, and more that I can't tell what they are.

Chicken croquettes for an appetizer.

Dessert: Plum tart with a little vanilla ice cream over the top.

Still working on leftover Chinese veg soup (trying to maintain a diet).
drinks: water and hot Chinese herbal tea.

This time it's a bit different. The protein in the suffing is shrimp (a luxury in this house). Also: rice, chopped spinach, diced tomato, onion, yellow bell pepper, garlic, parsley and a touch of lemon zest.

Topped w/ buttered bread crumbs with a hint of basil.


I would normally serve this w/ another vegetable or some pasta, but it's a hot day and I think the zucchini boats will be enough.

Fruit for dessert (either a plum or an orange).

homemade coleslaw and frozen California mix, nuke with Thyme and dairy free butter and chili... I made chili-dogs (brown mustard, relish onions also) for me hubs mixed his hot dogs with chili...really was simple but good.
