(38,548 posts)The stuffing was: ground beef, rice, diced carrots, diced onion, diced yellow bell pepper, minced garlic, basil and parsley. I melted some shredded mozzarella on top at the end of cooking. Buttered beets served on the side.
Dessert: Ben & Jerry's World's Best Vanilla topped w/ blueberries macerated in a little sugar, freshly squeezed orange juice, a dash of cinnamon, and a couple of drops of almond extract.
(Picking berries this afternoon, a bird was trying to scare me away from the bush. Guess he wants the berries all to himself. He was just above my head squawking at me and flapping around. At least he didn't poo on me.)

(68,543 posts)at a rented house on a lake...great seeing my brothers and sister. I made corned beef hash and put two poached eggs on top...I also had fruit salad and am contemplating making cookies...thus far I have resisted.

(4,604 posts)I hadnt made it in over a decade because my ex couldnt stand the smell of curry powder.
It was delicious and my house smells delectable!
Asparagus on the side (not the best choice of a side for this dish, but needed to use up the rest of the bunch in the fridge)
