What's for Dinner, Thurs., May 28, 2020

I made the most incredible salad, all with fresh garden vegetables. I used oak leaf lettuce (bright green), a couple small heads of spinach, and various small-leaf mustards for spiciness. Also some red leaf for contrast. I shelled fresh peas and they were so young that I didn't even need to cook them. Added thinly sliced red onion and gold and red grape tomatoes (tomatoes came from the store).

For the dressing, I used mayonnaise which I thinned using the stock from the pea shells that the RG made yesterday. Added a little agave. Fresh salads: nuthin' like them!

Roast pork sandwiches on brioche. They also have prosciutto and some of the RG's new French cheeses. He made a dressing for the bread that was a combo of rosemary, olive oil, pecans, and apple.

Dessert: green grapes.

The broth for the soup is made from pork bones cooked overnight. The vegetable soup has everything I needed to use up in the vegetable department. My snow peas are really coming in well right now. I have lettuce that is ready to eat. Waiting on my greens and everything else.
