I love dried beans. Navy beans, red beans and rice, pintos, black-eyed peas and ham you name it. For some reason I've never done garbanzo beans. Bought some when the hoarding began and they were the only thing left on the shelf and am just now using them.
Any help from very basic beans plus water to exotic would be helpful. I would ask that suggestions be tried and true for the cook offering them. I want to pick the brains of the prodigious cooks here at DU, the source of all knowledge.

(1,527 posts)Add some kind of cooked sausage. Also optional is sautéed onions and kale or spinach. Also optional is hot sauce or a little salsa, as well as chicken Boullion or chicken stock.

(36,818 posts)Tahini, fresh lemon juice, and garlic in the proportions you like. Process until smooth, drizzle with some EVOO.
Once you get the basic recipe down you can flavor it with all sorts of combinations of spices, herbs, and lots of other things limited only by your imagination. I kinda like smoked paprika and sun roasted tomatoes.

(14,887 posts)I found a recipe using sesame oil instead. Made it yesterday and it was delicious. Because sesame oil has such a strong flavor I only used two tablespoons. Easy recipe and like yours, can be embellished.

(2,036 posts)I live in South Asia, so I eat chick peas a lot, but this was my first and still favorite chick pea dish:
Heat olive oil and sauté onion and garlic. Mmmm, lots of garlic. Add 1 can tomatoes and 1 can chick peas (reserve liquid), some rosemary, red pepper flakes, salt and pepper. Simmer for a bit. Add 3C or so water and 1lb pasta. I use linguini because thats how I learned it. Pasta should be done in about 10 minutes. Add reserve liquid if too much water cooks off.

(2,420 posts)After you cook and drain the beans, combine them with cherry tomatoes cut in half, garlic, sliced onion and some italian dressing or homemade vinaigrette. You can also add parsley if you like. you can also just throw them on a salad. I love their flavor just like they are.

(44,990 posts)Or just coat them in a little olive oil, dust em with some spices (cumin and anything) and roast em until they get slightly crisp. Yum.

hereMy usual garbanzo go-tos are chhana masala, hummus, and 3 bean salad. The first is an Indian dish, chickpeas cooked in a spicy tomato sauce. My version varies depending on what I have on hand, but always includes onion, garlic, ground coriander seed, and cumin. BTW, they seem to take longer to cook than most beans, and definitely need a good soak overnight. I've lately been doing them in an Instant Pot, which means I can decide to have them for dinner that night.
A simple salad I make for pot-luck picnics: combine garbanzos with halved cherry tomatoes and finely chopped red onions, the add a simple oil and vinegar dressing. If you have feta cheese on hand, or black olives, or shredded basil leaves add those.
