What's for Dinner, Fri., May 22, 2020

Stuffed turkey meatloaf (cheese) with roasted leeks, carrots, and celery.

Tossed green salad with white radish, cherry tomatoes, carrots cut on the mandoline. Also red onion. The greens and radishes were all from my garden.

Cucumber salad with sliced red onion. Dill from the garden. Crema Mexicana for the dressing.

Quick edit, this is a dinner for the two of us.

ingredients
one pork chop (extra lg boneless)
one carrot
one zucchini
1 sweet potato
one very large clove garlic
smokey paprika
olive oil, salt pepper
mayo



Sear chop with smokey paprika place in oven to finish.

Sweet potato oven fries with garlic mayo on the side

sautéed carrots, zucchini with the left over minced garlic from the mayo.

So oven at 450, toss sweet potato slices with salt black pepper and olive oil, put in oven, sauté the pork chop, place ion the same sheet pan with sweet potato's, then when almost done toss carrots into sautee pan with olive oil heat till beginning to soften, add zucchini and garlic.
