Coming from Ontario, Canada, I was pretty unfamiliar with cobbler. Mostly in this neck of the woods we made crisps, which is some kind of a fruit mixture topped with a sort of streusel and then baked, like a bottomless pie. Hubby comes from Texas, and he's more familiar with cobbler. We had a jar of beautiful Ontario peaches that we canned back in 2016 that we wanted to use up, so here we go!
If you don't have canned peaches to hand, you can take fresh peaches and simmer them in a light syrup until they're soft to achieve the same result. Also, it really looks like a mess before it goes in the oven. It looks like it's not going to work, or that it's not mixed enough, but trust me, it will work! There was no camera trickery between the mess that went into the oven and the really quite delicious dish that came out at the end!

I mix my cinnamon with the dry ingredients and then sprinkle sugar on top to give it a little crunchy glisten.

(3,280 posts)But it came out amazing. I was shocked, it looked like such a soggy mess going into the oven! Pastry came out cooked and delicious, and the butter and syrup made a sort of peachy sauce beneath as well.

(12,904 posts)Ate it almost every summer day growing up. Peach, blackberry, strawberry, apple. Love it leftover for breakfast.
My mom even cooked it on the grill to keep the kitchen from heating up. My favorite...blackberry.

(3,280 posts)Except for two things: The seeds (always get stuck in my teeth) and the incredible thorny bushes you need to brave to collect them. Memories of my dad wading into a blackberry bush to get the nice big ones he saw up top, and coming out with his arms all scratched and bleeding!

(12,904 posts)Hot summer day. Next to the highway, by the railroad tracks, we saw a man and woman with long sleeves, long pants, hats and gloves, picking blackberries. They looked like hobos.
My friend says is that your mom and dad?
I said No.
I went home to fresh cobbler that night. It was delicious.

Pretty much you could use any fruit - I used strawberries, blackberries, and raspberries. To make it "dietetic" I use Stevia instead of sugar, but I sprinkled Demeara sugar on the top instead of the regular sugar they recommended.
The batter is thinner than yours so the berries sank down into it before it even began to bake. Since we didn't have any ice cream but did have some canned whipped cream, that's what we put on the cobbler. Ice cream with the warm cobbler would be better, but it would be delicious by itself.
Cobblers are one of the easiest fruit based desserts ever!

(15,936 posts)The cobbler you posted is a cake like cobbler which I've made. However, my mom would make a cobbler using pie dough she did a two layer crust. Fruit, then prebaked crust, more fruit and the other prebaked crust. I prefer the pie dough crust to the cake like crust.
I never made the pie dough cobbler as a kid, but did make the cake like cobbler. After leaving home I make my crusts using the pecan tassey crust (it uses cream cheese in the dough) which adds another unique flavor.
Now you gotta get your Texas hubby to try making it with the pie dough. It is YUMMY, especially with fresh home made whipped cream.
