Maybe a grocery store gift certificate for 10 dollars for whip cream and strawberries. Either he could get delivered or pick up. I think sending it in the pan would be the best way. As long as you don’t mind losing it. Then a cardboard box with newspaper or bubble wrap if you have. I think it’s so thoughtful!

make sure the all of the baking equipment is totally free of oils and grease. Also, you should have an angel food ring pan.

would mail me angel food cakes. It was great . Although one time the box was crushed and the cake was flattened.

like banana bread or similar (and they can be glazed with hard icing)

I apologize because I immediately thought of the delicious nut cake recipe my German friends make during the holidays but I can't find it! it isn't a flourless one, but it doesn't use much. they make it with ground almonds or hazelnuts but when they were here one year we made it with pecans and it was SSSOOO good. I know I have made it since then but I can't find the recipe.

it was glazed with a simple powdered sugar and citrus juice glaze (lime went really well with the pecans!)

I looked around briefly with the google and didn't really find anything that sounded like it. Maybe a pound cake with 2/3 to 3/4 of the flour as ground nuts instead? we made it in a bundt pan and loaf pans.

Easy to make, can bake in Bundt pan or two loaf pans. Ice with a lemon -powder sugar glaze, might add a little butter to the glaze; helps keeps moist.

When my 3 brothers were all in the military I would help Mom bake and send treats. The best thank you came when the youngest brother replied, " that was the best box of crumbs I ever had."

Used to send my grandson peanut butter cookies (his favorite) when he was in college up in New York. No matter how well I packed them, by the time they reached him, he had crumbs. He told me he loved getting the cookies, even if they were a jumble of crumbs.
