What's for Dinner ~ Tuesday April 30th Edition

Sorry, I've been AWOL again. The weather keeps changing and the rainy days are kicking my fanny (er...rather my joints)

Hope you are all well!
Bill will be having some thing pork-y (I cooked a pork roast Monday) and I'm not sure what I'll have. I do have a nice butternut squash that needs cooking - so I may make a big pan of misc. roast veggies for myself.

It's probably psychological, but I immediately feel healthy once I eat greens .

I have greens and blackeyed peas in the freezer. I can make cornbread but alas....no more sweet potatoes.

I think I'll heat up some nice spicey short ribs I fixed Sunday with a salad with homemade balsamic vinegar dressing and a small baked potato.

Went to Trader Joe's today and got some very nice-looking chops and a few other things. Beautiful yellow beans that I'll make on Sunday with lamb roast for Orthodox Easter. (Not that I'm Orthodox but any old excuse for lamb).

7. Porketta sandwiches.

The local butcher shop had porketta roasts on sale for $1.99 a pound....fantastic price! The sandwiches were delicious.
