6 Italian sausages (I used chicken sausages)
1 large green pepper, chopped
1 large onion, chopped
A little olive oil
Directions
In a large bowl, toss the green pepper and onion with a little olive oil. In a baking dish, place the sausages and top with the pepper-onion mixture. Bake at 400° for an hour. After 30 minutes, pierce the sausages with a fork.

(106,886 posts)2. "Sausage with peppers and onions" is a great standard beach / boardwalk fare in New England.
Baked long and slow with plenty of paprika. Served up on an Italian roll.

I made it in saute pan, w tomatoes (and wine.) Was a family favorite.

I've never tried roasting it. I always fry the sausage separately from the peppers and onions then pile it all up on a fresh hoagie roll.
