The Star Is Dressed in Red

'The regulars at Randazzo’s Clam Bar know what to order. I was still learning the ropes, though, so I invited suggestions.

My server’s advice was quick and definitive. “Get the calama’,” she said. “That’s why you’re here.”

Strictly speaking, the fried calamari was not the reason I had driven down Ocean Avenue in Brooklyn until it dead-ended at the white row of fishing ships and booze-cruise leviathans on Sheepshead Bay, then parked in front of the neon lobster with the name Randazzo’s pinched between its upheld claws.

No, it was the Sauce.'

... for 10 days, out-of-work recuperating for two months, and unable to drive for 8 months. I was just
barely keeping my head above water, so I had no money to go into Philadelphia, much less visit the
fantastic restaurants they could boast of during that period.

Philadelphia Magazine (a monthly publication) had the most incredible food writers that I have ever
encountered. I visited any number of restaurants vicariously... dining on my imagination in splendor.

The absolute BEST turn-of-phrase was from a woman who was reviewing a Chinese restaurant that
offered roaming carts of dim sum (little entrees more of a small appetizer "tasting" portion). She
tried a Chinese version of chitlins (intestines cleaned and fried -- never having had it or the original,
that's the closest I can come to describing it).

She wrote, "The dish was delicious, except for the still-lingering slight whiff of function."
