What's for Dinner, Mon., April 22

Greetings, everyone,

I'm making white bean soup recipe from this cookbook:

On the side, a big green salad with red, yellow, and green peppers, cucumbers, celery, and homemade French dressing.

Fruit salad for dessert, along with an apple cinnamon cookie.

Pro'lly a little white wine.

stuffed baked portabello mushrooms, large salad and garlic bread!

Desert will be some cinnamon honey muffins I made earlier today.

Your soup sounds wonderful! I've never had white bean soup before! Enjoy!

I'm doing a garlic-y White Beans and Jasmine Rice - one pot thing.
Saute onions in butter, then add beans, garlic powder (unless I have fresh) cajun seasoning, pepper and sea salt, a little smoke seasoning if I am going meatless (if not saute some kielbasa with the onions) then add stock and chunk in some rice and simmer until the jasmine rice is done. WAY better than it sounds.

I'd kill for some fruit salad!

Ice cream for dessert tonight.

Froze the rest of the beef stew and will have that later.

Bought some from HEB the other Fay and they were yummy, then found the recipe online and made them myself.

That sounds so good! Vegetarian here, but every now and then I cave on seafood! That sounds so awesome! Must head to HEB!

Recipe I found for eggs cooked in a sauce of diced tomatoes, sauteed onion, and harissa. It was fabulous. One of my friends said this was a dish she had in Turkey.
