Blister the skin over an open flame, remove seeds/stem, peel the outer layer away and slice 1/4" strips.

They'll both cut any heat that comes through the taco seasoning.

I just finished some chicken tacos, myself. Yum!

cream to fix that. I diced red pepper and put that in. Not really noticeable change in taste but I got more veggies in which is really what I wanted to accomplish.

Some diced zucchini might be good.

Pickled jalapenos.

Diced tomatillos?

Pan roasted frozen corn kernels? They are delicious when slightly caramalized.

For my taste, would skip the cottage cheese and use a dollop of sour cream.
