but I'm sure it would work with plain and red mixed. Just cut them in half. You could double or even triple the recipe. I've made them before and they are excellent.

1 lb. potatoes

2 TBSP Diced Onion

2 TBSP Butter (melted)

1 TBSP Honey

1 tsp Dry Mustard

A pinch of salt and a pinch of pepper.

1. Preheat oven to 375. Lightly coat an 11x7 lined baking dish.

2. Place potatoes in a single layer and top with onion.

3. In a small bowl combine melted butter, honey, dry mustard, salt, and pepper. Drizzle over potatoes and onion.

4. Bake 45-60 minutes, stirring occasionally.

including roasting them whole and tossing them with butter and fresh parsley, cutting them in half and frying them, boiling them and using them halved or quartered in potato salad, or boiling and smashing them, skins and all, with heavy cream and chives.

More of a lunch or dinner side would be my take.

(ed to add) Or just boil 'em all, slice, add toppings and plate.

Scrub em good, remove any bruises or bad places. Spray Pam in a shallow baking dish. Half any that are large. so all pieces are pretty much the same size. Sprinkle with a little season salt and pepper. Bake in oven at 375 degrees, I usually put foil over the top for about 15 minutes, remove foil and bake until potatoes are soft and starting to brown.

I have a some little red ones that I got at the farmers market, haven't cooked them yet, probably will tomorrow. Great with fish (salmon) or just about anything.

Make this with little new potatoes for the very best flavor, though it can be made with quartered Yukon gold or red potatoes. This creamy potato dish tastes great with chicken, fish, or steaks.
Ingredients:

1 1/2 to 2 pounds small new potatoes
1 to 1 1/2 c. fresh new peas or frozen
8 ounces small white onions, fresh peeled or frozen
1 1/2 tablespoons butter
1 1/2 tablespoons. all purpose flour
1 cup milk or half-and-half

Preparation:

Scrub potatoes and cut in half if a little large. Peel the onions, if not using frozen. Put potatoes and onions in a medium saucepan and cover with water. Add 2 teaspoons of salt. Cover and bring to a boil. Reduce heat to medium low and continue cooking for 10 to 12 minutes.
Add the peas to the potatoes and cook for 5 to 10 minutes longer, until potatoes are tender and peas are cooked. Transfer the vegetables to a colander to drain. In the same saucepan, melt the butter over low heat. Add flour and stir until blended. Add milk and continue cooking, stirring, until thickened. Add the drained vegetables to the sauce and gently stir to combine.
Serves 4.

Wash and boil them with the skins on.

When they are done add butter (lots! love butter) and some fresh dill and a wee bit of salt, cover and shake.

Very simple and very delicious.
