What's for Dinner, Tues., April 16, 2013

Salmon cream cheese sandwich with shrimp on rye.

Fruit for dessert: blackberries, apples, tangerines.

Working until 10 p.m. Had to take my lunch and dinner to school.

I put the remaining turkey thigh in the freezer, plan to make a la king out of it some day. I'm really not fond of dark meat turkey.

Pot roast is on the menu for tomorrow, though. Looking forward to a nice, slow cooked pot of seared beef, veggies, red wine, broth and spices.

Sauteed in coconut oil until fragrant and brown then removed and set aside while I stirred in several cloves of fresh garlic, a half cup of coconut milk, a tsp. or two of Asian fish sauce and two cups of washed and thinly sliced Swiss chard and stir over medium until greens are cooked to taste, add a little more coconut milk (if desired) and return filets to the pan to reheat. Serve over rice with a diced avocado drenched in fresh lime juice on the side or as a salsa. I've been working on discovering menus that highlight anti-inflammatory foods and this was quite tasty. Whether coconut milk is inflammatory or anti-inflammatory depends on the expert, but on me it works as anti-inflammatory. No dessert on this regimen -- I had my sugar ration of the day in the form of fresh blueberries in almost equal proportion to my oatmeal this morning.

I almost faint at the idea of "saute until fragrant," especially when it involves coconut.

about an hour after dinner, my most swollen joint of the day stopped hurting and the swelling disappeared--not quite like popping a balloon, but it was a sudden and dramatic improvement. The arthritis symptoms are back again this morning, but this anti-inflammatory course seems worth pursuing. Coconut sends me, too.

A partially frozen Greek yogurt for dessert.
