For years I have experimented with recipes and have yet to find the ultimate crepe

I used to have that problem making crepes in pans. I almost never ruin one anymore with the

We use the one in The Joy Of Cooking . . . not sure which edition . . . . lates 70s/early 80s.

The crepe recipe I use:
1 cup flour
1 cup milk
1/4 cup cold water
3 eggs
2 TBSP melted butter
salt
Whisk together and refrigerate at least half an hour. If I am making the batter for a dessert crepe I will throw in a little powdered sugar to the batter

That sounds like a nice touch.
The crepe maker is easier to work than a no stick frying pan...if i had a dime for every crepe i destroyed attempting to properly heat and maintain temperature on a pan. The best birthday gift i've gotten in many years.

Dinner was well received, Italian meat loaf served on a bed of pasta with a tossed salad.
The crepes were filled with a warm cinnamon-apple filling. My son , the toughest critic that I have to please was, pleased. It makes to labor worth it when you know it has hit the spot.

It called for a touch of granulated sugar.
The Whollyheretic's recipe calls for a touch of powdered sugar. Thus tonight I will give this one a test.
