1. Vegetable stroganoff. Or tilapia veracruzana (via bif / cookingwiththemark).

Sauteed onions, mushrooms, zucchini, cabbage, garlic. Simmered in sour cream, thickened with some corn starch and milk. Black pepper, paprika, some thyme. Over egg noodles.

(The tilapia is likely on hold until tomorrow. I have to open every window and door in my place if I pan fry fish. Friday looks good. I'm thinking about pan frying outside on the grill as the weather warms. Would solve the clinging fried fish thing.)

Noodles were just OK. Eh. But the desert was worth waiting for.

6. A can of green beans and a veggie marsala entree on sale.

It has some sort of lima bean mixture that make chunks like chicken with cauliflower, shredded carrots, a few green peas, brown rice and a nice indian marsala sauce. Got it for a buck at the frozen section of the grocery store for a tired day. Cheap, quick, filling, easy and tasted great.
