Herb-Crusted Salmon

Ingredients
1 salmon filet, with skin on
2 T butter
3/4 c panko bread crumbs
2 T beaten egg
2 t dried thyme
1 t dried tarragon
1 T Dijon mustard
1 1/2 T mayonnaise
lemon wedges

Directions
Dissolve 5 tablespoons salt in 2 quarts water in a large container. Submerge salmon in brine and let stand for 15 minutes. Pat dry and set aside. Melt butter in skillet, add panko, season with pepper and over medium heat, cook until golden brown. Transfer to bowl and let cool. Mix egg and thyme. In a second bowl, combine tarragon, mustard, and mayo. Place salmon on a baking pan, skin side down. Spread tarragon mixture evenly over salmon. Sprinkle panko crumbs over fillet and press it gently to adhere. Bake at 375° for 20-25 minutes. Serve with lemon wedges.
