Sliced potatoes, serranos, and onions fried in a little sesame oil until almost done and then add diced ham. A little garlic, soy sauce and other spices for flavoring. One large skillet full feeds me for 4 meals and I only have one pan to clean up afterwards.

I can't remember where I found this recipe, but I modified the breading a little bit...

1 cup sour cream

2 TBSP Dijon mustard

2 cloves minced garlic

1/2 tsp black pepper

Marinate 4 chicken breasts in the above mixture for about 30 min. (I usually let it marinate for 1-2 hours)


1 cup crushed corn flakes

1 1oz. pkg. dry onion soup mix

1/2 tsp parsley

1/2 tsp sage

1/2 tsp rosemary

1/2 tsp thyme

1/2 tsp lemon pepper.


Gently press chicken breasts into the above mixture to coat. Lay in a buttered baking dish and bake at 400F for about 25-30 minutes or until brown.

Yeah, I thought about that after I posted it, but take my word for it the chicken was so moist and juicy and the flavor was great!

we're headed up to a cabin outside estes park this afternoon, we may grill some brats or we may go into town for dinner. i think the biggest factor is going to be whether i can pull my husband out of the hot tub for any amount of time.

We will be coming through as part of our cross country trip. My mom lives in Boulder, but I would really like to take her up into the mountains for 4 or 5 days.

She planned to go up there and see it before we consider booking it. I hope she looks at Loveland Heights as well. They look really nice, but have no availability calendar on their website.

I cooked the pork tenderloin in a scrumptious sauce of honey/oyster sauce/hoisin/5 spice powder last night and made extra rice, so I think I am good to go.

Too many projects to work on today! It's rainy and chilly, and this dish is easy. Cube some roasted turkey, mix with some mayo and a light bechamel. Add curry powder and lemon juice to the mixture. Spoon the mixture over a bed of par-cooked broccoli (or a mound of frozen broccoli). Cover with grated or sliced cheddar and bake until the cheeze is all melty and bubbling and lightly browned around the edges.

Sometimes I serve this with true waldorf salad but tonight it's sliced oranges and grapefruit.

Muffins are good company for this dish too.

17. Beef stew

When it was cool and wet last week I wanted beef stew but we were eating leftovers.

So Saturday when we went shopping I bought beef, carrots, potatoes, mushrooms, and onions. Stew was made today.

3.5 lbs beef, cut into large cubes
2 lbs baby carrots, about 1/3 cut into 3-4 pieces each
5 medium onions, chopped
1 bunch of celery, sliced into 1/2 pieces
2 lbs. sliced mushrooms
3 lbs. petite red potatoes, cut into large chunks
mixed herbs(basil, thyme, marjoram, black pepper, mace, bay leaves, whatever you like)

Put about 1/3 each of the carrots, onion, and celery in the bottom of a crock pot. Put beef on top, sprinkle with choice of herbs and seasonings. Put rest of carrots, onions and celery on top. Cook on High for 1 hour. Add mushrooms, cook on High for 1 hour or until as done as you like.

My husband was making salsa at the same time and drained the liquid from the can of diced tomatoes. I mixed that with some corn starch and stirred it into the pot to thicken the gravy.

I had no room for the potatoes in the crock pot, so I tossed them with some oil and a package of Hidden Valley Ranch mix and roasted them for 20 minutes. The potatoes were a nice addition to the finished stew.

The immense amount of left over stew went into four containers along with the leftover potatoes. One container will be our meals for a few days. The others will go into the freezer in the morning and we can have beef stew several times over the next couple of months without having to do all the work and taking the time.

In a big frying pan i threw in a few dozen large shrimp, a can of chick peas,big bunch of Swiss Chard,an onion,seasoned with some clam broth and a few shots of Tabasco.
Everyone liked it...
