(146,218 posts)or in quesadillas. They always seem to make them soggy. How do you get around this?

(22,084 posts)slightly, I like them to have a little bit of crunch. Then on the pita pizzas I put the cheese down first and veggies on top and only bake for maybe 5 minutes at the most in a 450 F. oven.

(146,218 posts)I'm not a big fan of cooked zucchini, but it's so readily available and so inexpensive. Would love to find more ways to enjoy it.

(35,430 posts)A long-time friend is coming over; in fact, the person who found me my house!
He is a wine connoisseur and a jazz musician.
The rez culinary genius made:
Stuffed pork roast (carrots, onion)
Lamb roast
Potatoes
Salad w/ fennel, cucumbers, tomato, zucchini w/vinaigrette
Eight bottles of wine!

(36,186 posts)baked ziti and meatballs! Does that count?
Went to the store today, got my ricotta and mozzarella, and meatballs! I already had my own tomato sauce. I make my own meatballs most of the time, but sometimes if I'm short on time, I'll get the ones made fresh at the meat counter.
I like doing that when I have a little free time on Saturday, so I can have an easy clean up on Sunday.

(50,130 posts)Went to Trader Joe's yesterday, and Grocery Outlet today. (Grocery Outlet has wonderful prices on cheeses and specialty olives etc. Such as Boursin for fifty cents!)
So there were lots of tidbits, and a salad mix of baby kale, chard, and arugula.
I'm drinking pure cranberry juice (unsweetened) cut with water tonight to make up for the snacky supper.
