I love risotto but I think it's a chore to make. Have you used risotto in the box? And have you ever made risotto fritters? They sound so delicious but have to be deep-fried.

I have to work until 9 tonight; won't make it home until 10 p.m.

However.....

My spouse has been known to leave a dinner out on the counter for me, so maybe I should have said "it's a mystery."

I came home from work one day and my partner (who was a stained glass aficionado) had a whole boiled dinner fixing cut, pared and assembled on the counter ready to cook. All I had to do was through it all into a big pot and cook.

We are lucky to have such love and affection in our lives!

And that's a very good idea, too, to prep it with minimal work for you to have a fresh, hot meal.

Actually, when I came home he was still up and visiting with a friend. Made me up a nice platter of lamb chops, crispy potatoes, and a dish made with celery root.
