(272 posts)One of my favorites. You can also make risotto in a slow cooker without all that tedious stirring. I made it once with lots of caramelized onions, which I ended up hating because they were so sweet, but the rice itself was a perfect risotto-y texture. I don't make a lot in my slow cooker because I eat in the morning or at lunch, not in the evening, so there aren't that many recipes that allow you to cook something all night long (8+ hours).
I make refried beans in my slow cooker pretty regularly, though. It's hard to imagine, but you can cook them on high for up to 10 hours. Then in the morning it takes just 10-15 minutes to cook them down and mash them.

(16,330 posts)I made several batches over the holidays. If I have to cook the bacon, onions, etc and only use the crock pot to warm, I may as well leave it in the pan the usual way.

(11,854 posts)But I cooked it long enough to thicken it a bit. When it got cold, it set up more. Some of the reviews I read said that it was a bit thin for spreading, the same as her crock pot apple butter. That's why I added a bit of cooking time.
