We're at Rathausstrasse, like, the street that goes to the Rathaus, that was laid down in 1240-whenever. It's a different world even from Boston or Annapolis.

That Schnitzel was made with a -- wait for it -- pumpkin seed basil pesto. And it was. Fucking. Amazing. Fried to order at the Styrian festival. Right in front of you. With a freshly tapped cask beer poured. Austrians know how to do this stuff.

and the Austrian concepts of "Wienerschnitzel". With 'Wien', or Vienna, being in Austria, I guess the Germans have no loyalty to authenticity...

There's an old story that you can tell when the schnitzel is cooked properly if you can sit on it without it leaving a grease stain on your pants. Sounds apocryphal; can't imaging a chef allowing something like that...
