Ran an experiment this afternoon.

Found a rack of baby backs and a rack of spare ribs in the back of my freezer. Decided that I would do both as a side-by-side, and for once and for all make a choice.

Five hours, hickory, at 225, with a dry rub.

Spares could have used another 30 minutes or so, but it was good enough to make a call.

The spare ribs were good. But. The baby backs, by a mile. And it isn't just that they are more lean.

A couple of my neighbors, who were smelling this all afternoon and were willing to make the supreme sacrifice, and were still sober enough to actually have a sense of taste left, concur. Baby backs. Mos def.
